What is a Kalahari Truffle?
Known as Mahupu in Tswana or n’xaba in San, the history surrounding desert truffles stems back thousands of years. Terfezia pfeilii of the Hypogeous ascomycete family, differs from its relative of southern Europe by favouring arid soil. It’s found in dry and semi-arid areas in Southern Africa. Kalahari truffles grow close to the surface and are only visible to the trained eye via cracks in the red soil.

Elegant, layered and earthy, the Kalahari truffle has a textured umami flavour with floral, herbaceous notes and a subtle tannin.
